The role that beef plays in our fast food economy is deep and yet seeming far removed from who the animal is and where it comes from. The word hamburger even seems to refer to another animal, the pig. The history of our food system is often obscured in the interest of big business. This installment to the "progression" series is a symbol of when our food culture switched from agrarian to industrial.
